Cortepittora, Recioto di Soave DOCG

A wine made with 100% of Garganega grapes left to dry in special rooms until early January. A sweetness that caresses the palate and then leaves room for an explosion of dried fruit, dried apricot, honeyed notes and yellow flowers.


Classification
: Recioto di Soave Docg.

Grapes: 100% Garganega.

Production area: Pressoni locality; under the administration of Monteforte d’Alpone, at 200/250 meters above sea level, facing East, South/East.

Soil: Clayey basaltic soil.

Training system: Pergola veronese semplice and short espalier.

Vintage: Third week of September. Selection and manual harvest into plateaux on a single layer.

Drying: In well ventilated rooms until January/February. Very soft pressing with 35% must yield.

Fermentation: 25-30 days in temperature controlled stainless steel tanks.

Aging: 12 months in temperature controlled steel tanks. Aging in bottle: 12 months.

Description: Golden color; fine and pleasantly ethereal nose, with spicy notes of exotic fruit and dried apricot. Sweetness in the mouth is fully gratifying, palate is complex and balanced with a typical final almond scent.

Food matches: Excellent with dry pastries, traditional Christmas and Easter sweets, with cheeses and mustard.

Service temperature: 12-14°C.
