Grapes: 80% Garganega- 20% Chardonnay.
Production area: Hills of the Soave classico region, facing Soave and the Alpone valley between Monteforte d’Alpone and Brognoligo. Vineyards are situated at 200/250 meters above sea level.
Soil: Generally basaltic soil of volcanic origin but vineyards are also situated in areas with soils having a markedly calcareous skeleton of coastal sedimentary origin.
Training system: Pergola veronese semplice and short espalier (Guyot).
Vintage: Third decade of September. Manual harvest into 15 Kg cases, selection of grapes, de-stemming and soft pressing with a 60% must yield.
Fermentation: Temperature controlled steel tanks.
Aging and rifermentation: long Charmat method with extended stay “sur lie”. Bottle aging: 1 month.
Description: Bright straw yellow color with greenish hues; intense and flowery nose with hints of acacia and wisteria; fragrant and harmonic palate, fine perlage.
Food matches: From appetizers to desserts; excellent as an aperitif and pleasant with all fish dishes.
